UZU’s Kyoto flagship is the world’s first ramen shop to hold a Michelin Green Star (two years running, plus five consecutive Bib Gourmands) — a fully plant-based counter of 16 seats wrapped in a teamLab artwork. Unlike the Tokyo branch inside teamLab Planets, no museum ticket is needed here: book a normal restaurant reservation and walk in. Course-style service, cashless only, no children 6 and under.

What We Verified

  • Fully plant-based, stated officially — 12-hour broth of Rausu kombu, domestic shiitake, and vegetables; noodles of Hokkaido wheat and organic whole grain. Checked July 8, 2026.

The Green Star Question

Michelin’s Green Star is a fairly new award — introduced globally in 2020 — recognizing restaurants that pair notable cooking with sustainable practices. As of 2026 it remains rare in any category and rarer still in ramen, a genre Michelin has historically been slow to celebrate at the highest tier. UZU Kyoto is the first ramen shop in the world to hold a Green Star, and it has held it in consecutive years. What that recognition captures is not just the quality of the bowl (the shop also holds five consecutive Bib Gourmands) but the specific philosophy of the operation — a fully plant-based kitchen with a kombu-and-shiitake stock, using organic domestic ingredients, in a room built as an artwork rather than a conventional dining space.
